Slow-Cooked Pulled Pork Sandwiches*


Ingredients
1 tablespoon vegetable oil
3 1/2- to 4-pound boneless pork shoulder roast, netted or tied
1 can (10 1/2 ounces) Campbell's® Condensed French Onion Soup
1 cup ketchup
1/4 cup cider vinegar
3 tablespoons packed brown sugar
12 round sandwich rolls, split
Preparation
Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until it's well browned on all sides.

Stir the soup, ketchup, vinegar and brown sugar in a 5-quart slow cooker. Add the pork and turn to coat.

Cover and cook on LOW for 7 to 8 hours or until the pork is fork-tender.

Remove the pork from the cooker to a cutting board and let stand for 10 minutes. Using 2 forks, shred the pork. Return the pork to the cooker.

Divide the pork and sauce mixture among the rolls.


*I found this recipe on the Campbells website. I tried it a few weeks ago and it is EASY and DELICIOUS! Make sure you buy the good rolls--this can make or break the meal. We used potato rolls to put the pork in and it was very very tasty.

BBQ Chicken Wraps

Ingredients:

2 chicken breasts, cubed
BBQ Sauce
Lettuce
1 can Black Beans
1 can Corn
4 Whole Wheat Tortillas

Brown chicken in skillet. Turn to low, add BBQ sauce and cover. Cook on low for 5 minutes. Place cooked chicken and other ingredients on wrap and enjoy!!

Creamy Crockpot Chicken

Ingredients:
4 boneless skinless chicken breasts
1 can cream of chicken soup
1 Italian salad dressing mix (dry)
1/4 cup water
8 oz Reduced-fat Cream Cheese, softened


Place chicken in crockpot and and stir in all ingredients. Cover and cook on low for 4-5 hours. Serve over mashed potatoes or rice.

This recipe is so easy!! It's definitely a fix and forget about it recipe!

Tasty Tomato Soup

I have to confess something...I used to not be a soup lover. It's true. BUT I definitely converted after making this delicious tomato soup. It warms the soul. Really. I made this for Benjamin yesterday and he said he would eat it every day if i made it....just saying. I gotta give credit to my lovely mom though. She invented this recently and it has been a hit in our family ever since. I'll have to post a picture of it next time I make it! Maybe tomorrow?

3 Tbsp onion, chopped
1 clove garlic, chopped
1 Tbsp olive oil
1 can petite diced tomatoes
1 cup chicken broth
1/2 tsp crushed red pepper flakes
2 tsp Italian seasoning or oregano

Saute onion and garlic in olive oil until soft. Add tomatoes and chicken broth and bring to a boil. Then turn down to medium and add red pepper flakes and seasoning. If you want to thicken the soup, mix melted low-fat butter and flour together. Slowly add to soup while stirring constantly. Enjoy!

Black Bean Avocado Chicken Salad



I tried it a few days ago and it was delicious and so healthy! I tweaked some of the ingredients for what I think made it even better!






1 teaspoon crushed red pepper (more if you like a little spice!)
1 teaspoon olive oil
1/2teaspoon chili powder
1 chicken breast, sliced into strips
1/2 cup black beans, rinsed and drained
4 cups pre-washed salad mix
1/2 cup avocado, diced
1/2 cup canned no-salt-added corn, drained
2 tablespoon fat-free salad dressing of your choice(Any kind of vinaigrette is especially good!)

Place chicken strips in a bowl and toss with the chili powder. Sauté red
pepper and olive oil in a non-stick skillet for one minute. Add the chicken and cook for
five minutes. Add the black beans and sauté for another three minutes. Remove
chicken and beans from heat and toss with the salad, avocado, corn and dressing.
